Quicker Than Take Out Orange Chicken
It is difficult to find a good and healthy oriental recipe that works for the diabetic. This one is a winner!!
Quicker Than Take Out Orange Chicken

NOTE: This is one of the BEST recipes in the book. Gets RAVES!
Sauce:
1/2 C water
1/3 C light orange juice
1/2 C splenda
2 T brown sugar
2 T rice vinegar
2 T reduced sodium soy sauce
3 T lemon juice
1/4 t ground ginger
1/8 t red pepper flakes
2 T cornstarch
Chicken:
1 1/4 lbs bonless skinless chicken breast chopped
1 large egg, beaten
1/4 C flour
2 T canola oil
1 small red pepper chopped
1 small onion chopped
To make the Sauce: In a med saucepan, whisk together the first nine ingredients (water through pepper flakes) Place the pan over med hig heat and bring to a low simmer
In a small bowl, mix together 2 T of water and the cornstarch to create a slurry and whisk into the sauce. Bring the sauce to a low boil and cook for 1 minute or until the sauce thickens and clears. Reduce the heat to low and allow to simmer.
Roll the chicken pieces in the egg and toss with flour to coat. Heat 1 T of the oil in a large nonstick skillet over med hig heat. Add half of the chicken and cook for 4 to 5 minutes or until well browned on all sides and chicken is cooked through. Transfer the chicken to a bowl and cover. Heat the remaining oil and cook the remaining chicken pieces. Add the chicken to the bowl and set aside.
Add the red pepper and onion to pan and cook for 4 to 5 min or until slightly softened. Add the chicken to the pan and then the orange sauce. Stir to coat and serve. :)

And Can it Be?
Today I was hurt by gossip. I am in pain both physically and personally. I spilled olive oil all over the kitchen counter, creating an icky, oily mess to clean up! I have dealt with selfishness and self pity. It has been a rough day. However, I have not had my home destroyed by a tornado. There are so many hurting far worse than I. As I listened to my CDs this song lifted my spirits. It reminded me of my humaness and worth and of His Love, Grace, Mercy and Worthiness. Without God I am nothing. Thank you for saving my soul!

A Simple Woman’s Daybook 5/2
For today… Monday, May 2, 2011 ~ May already!
Outside my window… it's cloudy, it's cold and it's raining... that sounds like a broken record since January 1 of this year!
I am thinking… I am thinking about having reconnected with another cousin today. :) It is joy. I didn't grow up close to my parents' families so I never have gotten to know them. I appreciate how close the web and facebook can bring some of us. I really hope we get to be together and visit and develop a relationship! Even at our ages.
I am wearing… my purple slacks and purple print top
I am hearing… the news on the TV talk about Osama Ben Laden's death. I am thankful for this. I find it strange and not a good feeling to be happy of someone's death, but this man was true evil. I am hoping that this brings some peace to those families that lost someone they love in the 911 attacks. And I continue to pray for our nation for I am not naive enough to believe that this means the end of our concerns.
I am reading… my devotional. It has had 2 really good devotions on Good intentions and better intentions .. how we need to make sure that our intentions align up with God's directions.
From the kitchen… for supper tonight flour tortilla tacos.
Around the house… I need to finish up the laundry and unpack my Avon order.
A few plans for the rest of the week… looking at homes for my daughter, setting up an appointment for our golden to get a wash and cut.
