I could Cry


That is me in the blue top Christmas of 2009, celebrating with my family.  In physical and inside in emotional pain.  I could cry looking at this picture.  I guess I just didn't see me as being this big.  I knew in my heart I was but just didn't see it in my eyes. Above is down 150 lbs in my journey started June 11, 2011.  I have not looked back ONCE in sadness or regret. I have been making one of the most important decisions of my life.  My cholesterol levels are WELL within in the acceptable limit and my blood pressure is down naturally without medication!  I am healthier AND happier!    I am enjoying my beautiful family MUCH more!  :)  I thank God for HIS presence in my life and helping me along this journey!

Toasted Sesame Ginger Salmon



Not my picture!  This is from How Sweet it Is.  Check it out.  Looks yummy!  I love Salmon!!  Healthy and good!!!


Toasted Sesame Ginger Salmon
serves 2-4
1 1/2 pounds raw salmon
1/4 cup olive oil
2 tablespoons toasted sesame oil
2 tablespoons rice vinegar
2 tablespoons brown sugar
2 tablespoon soy sauce
2 garlic cloves, grated
1 tablespoons freshly grated ginger
1-2 tablespoons toasted sesame seeds
4 green onions, sliced
Line a baking sheet with aluminum foil and place a wire rack over top. Spray the rack with nonstick spray.
In a large bowl or baking dish, combine olive oil, sesame oil, soy sauce, garlic, ginger, vinegar, brown sugar and whisk well until combined. Add salmon to the dish or place everything in a ziplock bag, then refrigerate and marinate for 30 minutes.
Preheat the broiler in your oven. (Or preheat your grill, etc if you prefer to use something else.)
Remove salmon with kitchen tongs and place directly on the wire rack. Sprinkle with a little bit of salt and pepper, then place directly under the broiler. Cook for 10-12 minutes, depending on the salmon’s thickness (our’s was just about an inch thick), until opaque and easily flakable with a fork. You can flip the salmon halfway through cooking if desired.
Remove and serve immediately, with a sprinkling of toasted sesame seeds, green onions and the glaze below.

Sesame Ginger Honey Glaze
1/4 cup honey
1 teaspoon toasted sesame oil
1 teaspoon soy sauce
1/2 teaspoon freshly grated ginger
1/2 teaspoons toasted sesame seeds
Combine all ingredients in a bowl and whisk until smooth. Pour over salmon.

Happy Birthday to my April Fool! :)

To Quote The Beatles "Will you still love me, when I'm 64?" The answer is YES!  My hubby turns 64 today and that is no April Fool's joke.  We compliment each other.  And we love so many of the same things!  I am thankful for this gift of God and today we celebrate with his mom's famous birthday cake... Well, famous to him, SPECIAL to him.  I carry on this tradition.  It didn't turn out quite like I wanted today but will still be enjoyed.  Family and friends will be arriving soon to help him celebrate. :)

Ah.... Sweet Humbling Experiences

The Lord just keeps blessing me with weight loss.  I am now down 136.2 lbs.  Saturday, I went out window shopping and went to Nordtrom's Rack.  I really did not intend to purchase anything, but a clearance on black jeans caught my eye.  Perfect for riding on the Harley was my thought. Loved that they had a jewel design on the back pockets.  I picked up a pair and did not try them on, actually thinking that they would fit me down the road a month of two. Afterall, I have not seen this size jean in YEARS!  Took them home and hung them in my closet.  Monday morning before work I decided to give them a try and see how tight they were on me.  Wonder of Wonders! They FIT me NOW!!  I was SO excited, I cut off the price tag and decided to wear them to work!  I just love them!  Today, I decided to wear them again.  I carefully laid them out on the bed while I searched for a sweater to wear with it.  As I picked them up to put them on, a little baggie caught my eye.  "What is THIS?" thought I.   Extra jewels for the jean pocket attached to the tag on the back of my jeans!  OH MY WORD.  I had worn these all day Monday with this little baggie sticking off the back end of my jeans!    Here am I in the clouds, thinking how great these look, how thin my legs are getting!  Ah.... such are these times that the Lord reigns us in and says.  "I am the Lord.  I am the controller of all things.  You are human and prone to pride and error."  Ok.  I was a bit proud, OK, maybe a LOT proud.    Thank you, Lord for the ability to laugh at myself and not always have to take myself so seriously.  I am proud of the weight loss.  But more than proud, I am so thankful to YOU, for giving me this new lease on life.  Without Your support, Your help, Lord, I could not have gotten where I am.  And I thank you also, Lord, for my husband, who have been such a tremendous support. He has encouraged me and complimented me and talked me up to his friends.  He has shown me that he is proud of me and appreciates my efforts and he eats what I serve him!!!  lol    Aside from You, Lord, he has been my biggest supporter and encourager.  And I have a couple of friends, Lord, that are a gift from you.  One that has known me for years and has seen me in many sizes!  For the encouragement and the compliment that I am looking like my mother.  And for another friend that hasn't known me as long but is just as close and dear.  Who with tears in her eyes, told me the other day that I am like looking at a whole other person!   For family that is happy to see their mom, grandma getting healthy so that she can prayerfully be around longer for all of them.  I have been getting compliments that I have never heard before, words that I have never associated with me.  This journey is not about compliments but it is about getting healthier and being the best person that I can be.  I am thankful that the Lord has and is with me every step of the way.  And thank you, again, for humble moments.  Always keep me real!  And always help me stay true to only You, Lord.

Week 37 and 134 lbs GONE!


Week 37 and I am down 134 lbs.  Only 44 lbs left to go!  I am feeling sooo much better and have so much more energy.  I feel like 60 IS the new 40!  So thankful to the Lord and to www.healthierishappier.tsfl.com for this wonderful, healthier life!!!!  I am LOVING my new jeggins from HSN.com.  They are part of the Diane Gilman 2 collection.  I have been loving her clothing for a long time.  I am so excited to get to goal and pair up more of her great clothing!!!!

Girls night out!










My daughter in law and granddaughter came to spend the weekend with us.  She wanted to go out to a dressed up dinner on Saturday night so we got my daughter and her 3 girls and off we went to have fun! :)

 Princess Kayden just loves her Auntie Mary! :)

 When we were seated at our table, the waiter asked me if we were celebrating anything special.  I told him, "Yes!  US!!!"  Fun night!  Good fellowship!  Such blessings!
