I got this recipe years ago from the old TSR recipe board. This is delicious on hot rolls, biscuits or toasted English muffins. Beautiful addition to holiday gift baskets too.
2 C. cranberry juice cocktail 3 C. sugar 1 tsp. grated orange rind 1 C. honey 1/2 bottle liquid fruit pectin
In a heavy 3 qt. saucepan, bring to boil cranberry juice, sugar & orange rind. Boil gently for 10 minutes. Stir in honey. Bring to rapid boil & boil 1 minute. Remove pan from heat. Stir in liquid pectin; skim off any foam. Pour into hot, sterilized jelly jars. Seal. Makes 5 (6oz.) jelly jars.
