Savory Zucchini Bread


I made this for our friends' birthday dinner today. I have only had the sweet zucchini bread so this was different and we all enjoyed it. I served it with BBQ pork and I thought it a very savory and delightful accompaniment!

Zucchini Bread

  • 3 cups all-purpose flour
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 cup buttermilk
  • 1/3 cup sugar
  • 1/3 cup butter, melted
  • 1 cup shredded peeled zucchini
  • 1 tablespoon grated onion

Directions:

In a large bowl, combine the flour, Parmesan cheese, salt, baking powder and baking soda. In another bowl, beat the eggs, buttermilk, sugar and butter. Stir into dry ingredients just until moistened. Fold in zucchini and onion.
Pour into a greased and floured 9-in. x 5-in. x 3-in. loaf pan. Bake at 350° for 1 hour or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (16 slices).

I too have only had the sweet version. Will have to give this a try. Thanks for sharing!
